Thank you for your interest in Gryffon’s Aerie farm, we welcome farm visitors every week-end from 11:00 a.m. to 4:00 p.m. no need to call ahead.
We always have a wide selection of beef and pork products for sale from the farm. There are no minimum purchase requirements. Everything we sell is USDA certified and flash frozen at the processing facility. All cuts are packaged individually and ground beef and pork sausage are in 1 pound packages. Our roasts are 2 to 3 pounds in weight. Our grass-fed beef is dry-aged for a minimum of 21 days (which means that all the excess water is out), this is an advantage to our customers as our meat will not shrink any when it is cooked, unlike commercial products. Dry aging at a controlled temperature is a time honored process that allows enzymes in the meat to break down tissue, acting as a natural tenderizer. This process gives the beef a richer, more concentrated flavor.
All our livestock are out in pastures surrounding the house so they are easily accessible for our guests to visit. If you are considering spending some time with the animals appropriate footwear for young children is recommended (i.e., closed toed shoes).
At Gryffon’s Aerie, we go “beyond organic” (for current USDA standards see “definitions in “In the News” Section). By this we mean that our cattle and pigs graze freely in wide open pastures, therefore getting plenty of sunshine and fresh air the way nature intended.
