The Story
Devon and Belted Galloway cattle, Tamworth pigs and Cotswold sheep all grazing on gently rolling hills, sounds like a centuries old British farmstead. This is what we have created at Gryffon’s Aerie in the Historic Green Springs District of Louisa County.
The farm started out in 1999 and our goal was to raise the best possible meat for our family without harmful hormones and unnecessary antibiotics. We started with one Devon heifer “Avalon” and two Devon steers, along with four Cotswold sheep and a pot-bellied pig “Camille.” Today we have over 100 head of purebred Devons and Belted Galloways and over 40 Tamworth pigs.
Raising livestock in a humane manner was not our only goal though, we wanted to achieve a gourmet meat product that rivaled the tables of Europe and South America. Through purebred breeding of theses heritage breeds and grass feeding only, to our unique dry-aging process and detailed butchering we have created this artisinal product that James Beard chefs tout as some of the best meat available.
Our butcher has been selected because of his knowledge of grass-fed beef and the necessary dry-aging process. He excels in unique cuts that chefs admire and home cooks appreciate.
As members of the American Livestock Breeds Conservancy it is our task to protect the genetic diversity in livestock as well as preserve the integrity of heritage breeds.
